Three names from the official source
On its Përmet page, the National Tourism Agency lists reshedi — a traditional cake —, „drudhe", breaded chicken, and Gliko of Përmet, preserved fruit, as local specialities. That is the list. No official source adds other named dishes.
For gliko, the documentation goes much deeper: the Slow Food Presidium, the preparation method, and two fruit lists that disagree. All of it is gathered in the gliko piece ↗.
What we did not write here
We did not write recipes. The official source publishes no ingredients, measures, or cooking steps for reshedi or „drudhe", and this portal has no interest in filling the gap with invention. Household recipes exist — they live in kitchens, not in unsourced web pages.
